White Borscht Soup

Ingredients

  • 6 cups water
  • 4 garlic cloves, minced
  • 1 cup sour cream
  • ¼ cup all purpose (or GF) flour
  • 1 pound smoked Polish kiełbasa sausage (Whole Foods sells it!)
  • 6 medium potatoes, peeled and cut in to 1-inch chunks
  • 6 hardboiled eggs
  • 1 onion, diced
  • 1 tbs of butter or oil
  • Fresh dill
  • Salt
  • Freshly ground pepper

Directions

  1. Add water and kiełbasa to a large pot. Boil for 25 minutes. Then remove kiełbasa from the pot and put aside.
  2. Sauté garlic and onion in butter.
  3. Add potatoes, garlic, and onion to the pot. Cook until potatoes are cooked, about 15–20 minutes.
  4. Whisk sour cream and flour in a separate bowl, then stir in to the pot. Cut up kiełbasa into small, ½ inch slices and add to the pot. Add salt and pepper to taste.
  5. Top with sliced hardboiled eggs and dill. Serve, and enjoy!
