Piña Colada Popsicles
What’s better than whipping up a refreshing, fruity cocktail at home? Stocking your freezer with a boozy popsicle version that’s just sitting there waiting for you to enjoy it.
Ingredients
- 2 c. pineapple juice
- ½ c. pineapple chunks (fresh, frozen, or canned — doesn’t matter)
- ½ c. rum
- ¼ c. coconut cream (like Coco Lopez)
Directions
Put all the ingredients in a blender and puree until the pineapple is chopped up and the mixture is only a little chunky. Pour into popsicle molds, leaving about 1/2 inch space at top. Freeze about 3 hours, or until solid.
If you don’t have popsicle molds, you can prepare the same mixture as a boozy snowcone. Pour it into a glass pan and freeze until solid. When you’re ready to serve it, let the pan sit out for a few minutes, then scrape the frozen goodness into a bowl and eat it with a spoon.
