Gloopy Glops
Ingredients
- 5 cups “Special K” cereal
- 1 cup light Karo corn syrup
- 1 cup sugar
- 12 oz (1½ cups) peanut butter (creamy preferred, but not a showstopper)
- 6 oz butterscotch morsels
- 6 oz semi-sweet chocolate chips
Directions
Equipment
- 9x9 pan (9 x 13 can work too)
- Large bowl
- Medium microwave-safe bowl
- Medium saucepan (4 cup capacity minimum)
- Spatula
Steps
- Grease 9x9 pan with some butter or spray oil.
- Measure the cereal into large bowl.
- In the medium saucepan, over med-high heat, bring the corn syrup & sugar to a boil.
- Immediately take off heat and add peanut butter. Stir until smooth.
- Pour peanut butter mixture into cereal bowl. Stir until combined.
- Don’t over do it, you want the cereal flakes to hold some of their shape.
- Move cereal+PB mixture into the 9x9 pan. Press to make the top pretty even.
- If using a larger pan, just use 2/3 of the pan. The mixture will hold its form.
- Put just the butterscotch morsels in the medium bowl.
- Microwave on medium until they’re melted. Then add the chocolate chips to the butterscotch goo and melt them too. Stir until smooth.
- If you don't have a microwave, do this step in a double boiler.
- The butterscotch has a higher melting point than the PB.
- Smooth the butterscotch+chocolate mixture on top of the cereal mixture in the pan.
- Cut when chocolate solidifies. Or just eat warm and gooey.
